The Aoniko Honyaki is made only of one type of steel.  While most Japanese blades bond a soft steel and a hard steel, this blade only has a hard steel.  It can be used widely from home to professional. This blade needs to be cared for more than stainless steel as it will rust easier, water should be removed immediately. Please do not cut bone or frozen food. It may cause the it to chip. No dishwasher please.
Petty & Paring knives are small utility kitchen knives perfect for small proteins, fruits and vegetables.

Ideal for: Slicing and dicing.

Useful on food types: Small proteins as well as small to medium fruits and vegetables including apples, oranges, carrots, broccoli, and garlic.

Makes cooking enjoyable

I purchased two knives from Hasu-Seizo a few months back. The knives are very well crafted and the balance is just right for my smaller hands. I had carpal tunnel surgery a little while ago and heavier knives are still difficult for me to use. I am an avid home cook and enjoy trying out new recipes. These knives are light and are a dream to use. Thanks for making such a wonderful (and beautiful product). I plan to buy another for my good friend for a birthday present. I know she will love it too!
