Do you need a knife you can use for all those smaller tasks? 

This handcrafted Blue Super Steel petty knife is the perfect length for everything from cubing small chicken breasts to peeling an apple. The Isamitsu Aoniko petty knife will keep a sharp edge for an extremely long time and looks stunning while you work (or if you'd like to display it on the wall as artwork!). 

This petty has a little more depth to the blade than other similar length petties.  So if you're looking for a petty with a bit more substance to it this will be a great addition while still being nimble in the hand! Hand forged Blue Super Steel is one of the hardest materials to forge due to the composition and requires the utmost skill.

Ideal for: Slicing and dicing.

Useful on food types: Small proteins as well as small to medium fruits and vegetables including apples, oranges, carrots, broccoli, and garlic.

The blade is forged Aogami Super (Blue Super Steel), high carbon steel which can be sharpened to a razor edge and will maintain the edge for a long time.

This blade needs to be cared for more than stainless steel as it will rust easier, water should be removed immediately. It is a fascinating knife that can be used widely from home to professional. 

This knife maker is from the Ibaraki Prefecture outside of Tokyo region. With two master blacksmiths, Isamitsu is a smaller company focused on unique handcrafted designs using high quality materials.  They design their knives with high carbon steel such as Aogami Super (Blue Super Steel), shirogami (white steel #1), and aoniko (blue steel #2) along with locally sourced wood such as maple and burberry.
