The high-quality Japanese Shirogami #2 (White Steel #2) steel which has been used for a very long time in Japan. This shirogami #2 offers extreme sharpness, exceptional edge holding. It must be wiped down after each use. 
It can be used widely from home to all the way to professionals. Please do not cut bone or frozen food. It may cause the knife to chip or other damaged. No dishwasher please.
Left handed version is available upon request, additional time and cost needed.

Usuba Japanese vegetable knives are single bevel knives designed specifically for use with vegetables.  The single bevel vegetable knife can be used for specific food prep techniques such as peeling a consistent thickness from a daikon radish.

What a Knife !

Not only is the knife fantastic!!

Hasu-Seizo sent a little gift along with my purchase. I'm not going to give it away. Just to tell you, I'm still smiling AND I haven't had to use it.

This was my first single edge knife and it did NOT disappoint. I am going to buy another one.
