The Hado Shiosai 210mm Kengata Gyuto is a masterpiece of modern Sakai craftsmanship. Part of the celebrated Shiosai ("sound of the tide") series, this blade represents the pinnacle of high-performance cutlery. Forged from SG2 (Super Gold 2) Powdered Steel, this knife reaches an elite hardness of 64 HRC, offering edge retention that remains "laser-sharp" long after other stainless steels have dulled.

The Kengata (Sword-Tip) profile provides a lower, more aggressive point of contact than a traditional Gyuto, granting the user surgical precision for intricate tip-work and scoring. This technical excellence is paired with a rare Sakuraza handle, featuring a core of Oak wrapped in genuine Cherry Bark. This traditional Kabazaiku bark-work is naturally slip-resistant and develops a beautiful, deep luster over years of use.

Sharpening Maintenance

SG2 steel is remarkably rewarding to sharpen, but its high hardness requires quality stones. To maintain this blade's surgical edge, we recommend a #1000 Grit Whetstone to start. Then, a #6000 Grit Whetstone for finishing, which produces a mirror-polished finish that highlights the "Shiosai" tides of the blade.

  • Care: Hand-wash only with mild soap and dry immediately. Never use a dishwasher.

  • Safety: Strictly avoid cutting bone, frozen foods, or hard pits. A 64 HRC edge is optimized for fine cutting and should never be used for prying.
