Rooted in Japan's coastal fishing heritage, the Funayuki ("boat-going knife") was originally forged for fishermen who required a single, dependable blade to handle every prep task at sea. Crafted in Miki City by the master artisans at Miki Hamono Seisakusho, this traditional single-bevel knife combines rich heritage with stunning aesthetic refinement.

Forged with a core of White Steel (Shirogami) and wrapped in elegant wave-patterned Damascus cladding, this knife delivers an exceptionally sharp, razor-thin edge that takes a keen apex with ease. While thinner and lighter than a heavy Deba, the Funayuki retains a stout spine near the handle, making it versatile enough to fillet small fish, slice paper-thin sashimi, trim meats, and chop vegetables with single-bevel precision.

Traditional Craft: Magnolia Wood & Buffalo Horn

Complementing the rippling Damascus steel is a classic Japanese Wa-style handle crafted from light Magnolia wood and capped with a natural Buffalo Horn ferrule. Magnolia wood is naturally moisture-resistant and offers a warm, tactile grip that becomes even more comfortable over time, making it an ideal companion for both outdoor adventures and daily kitchen prep.

High-Carbon Care & Maintenance

White Steel (Shirogami) is a pure high-carbon steel prized for its unmatched sharpness, but it is non-stainless and will rust if exposed to moisture.

  • During Use: Keep a dry towel nearby. Wipe the blade completely dry frequently during prep, especially after cutting acidic ingredients like citrus or tomatoes.
  • Storage: Hand-wash only with mild soap and dry immediately. Never use a dishwasher. If storing the knife for an extended period, apply a light coat of food-safe mineral oil or Camellia oil.
  • Safety: Do not use this knife on frozen foods, bones, or hard seeds/pits to avoid chipping the fine edge.

Frequently Asked Questions

How does a Funayuki differ from a Deba? A traditional Deba is thick and heavy, designed specifically for heavy fish butchery and working through small bones. A Funayuki is much thinner, lighter, and more agile—behaving more like a cross between a Petty, Utility knife, and a thin Deba. It allows you to slice sashimi and prep vegetables in addition to filleting small fish.

Will White Steel change color over time? Yes! Because White Steel is a reactive carbon steel, it will naturally form a protective dark patina over time through contact with proteins and acids. This patina is completely safe, helps protect the steel against red rust, and tells the story of your culinary work.
