All Japanese Chef Knives

Authentic Japanese Chef Knives

There is a special place in Japanese culture for kitchen knives. Japanese chefs revere them for the unrivaled precision they offer, as well as the skill that goes into forging such blades.

At Hasu-Seizo, we bring you the fruits of a proud tradition of knifemaking that goes back centuries to swordsmiths in the Sengoku period. We source our products from some of the most venerated knifemakers in Japan, including Sakai Takayuki, Sawakazuma, Doi Knives, Kaneshige Hamono, Isamitsu, and Misuzu Hamono.

All our knives are handcrafted by artisans using traditional techniques. They are forged with high-carbon steel and the highest grade stainless-steels to create thinner and lighter blades that last longer and serve you better than anything else you’re likely to find. Depending on the type, you can use these knives for a variety of kitchen prep work.

Many Japanese knives have high-carbon content, giving them more durability and a keener edge than run-of-the-mill stainless steel knives. We carry knives made from a range of high-carbon alloys, including Damascus steel, Blue Steel #2, Blue Super, White Steel #1, White Steel #2, and more.
