This Honesuki boning knife is made with Japanese steel.  While most Japanese blades bond a soft steel and a hard steel, this blade only has a hard steel.  It can be used widely from home to professional. This blade needs to be cared for more than stainless steel as it will rust easier, water should be removed immediately. Please do not cut bone or frozen food. It may cause the it to chip. No dishwasher please.
