Aichi Steel developed ZA-18 steel to compete with VG-10 stainless steel, a common material for Japanese kitchen knives. Though ZA-18 knives and VG-10 knives have similar chemical compositions, ZA-18 outperforms its predecessor in several highly beneficial ways to chefs and serious home cooks.

ZA-18 has higher carbon, chromium, molybdenum, and cobalt content. This composition makes it stronger and more durable than VG-10. ZA-18 has a hardness between 61 and 63 HRC. The blades can be razor-sharp, and the edge retention is excellent.
