The Galaxy in Your Hand: Sakai Takayuki Ginga Gyuto

The Sakai Takayuki Ginga (Galaxy) series is where elite metallurgy meets celestial artistry. This 69-layer Damascus Gyuto features a core of ZA-18 Stainless Steel, a premium alloy from Aichi Steel that offers a sophisticated upgrade to standard VG-10. With higher carbon and cobalt content, ZA-18 achieves a staggering hardness of 61-63 HRC, providing incredible edge retention that rivals high-carbon steel while remaining resistant to rust.

Named "Ginga" for its stunning visual patterns that resemble a flowing galaxy, the blade is paired with an elegant Wenge wood handle and a traditional Buffalo Horn bolster. This combination of a high-count Damascus cladding and an exotic African timber handle makes it one of the most aesthetically and technically impressive knives in the Sakai Takayuki lineup.

Maintenance & Long-Term Care

Pro Tip for Longevity: Because the ZA-18 core is tempered to a high HRC (61-63), the edge is incredibly sharp but more brittle than softer steels. We recommend a Magnolia Wood Saya or a felt-lined Knife Protector for storage. This prevents micro-chipping and protects the 69-layer Damascus finish from scratches when stored in a drawer or knife roll.

Sharpening Maintenance: High-hardness steel like ZA-18 requires quality whetstones. To maintain this blade's surgical edge, we recommend a Double-Sided 800/6000 Grit Whetstone. The 800 grit side restores the geometry, while the 6000 grit side produces the mirror-polished finish this "Galaxy" blade deserves.

Performance & Care

  • Best For: High-precision slicing, dicing, and all-purpose kitchen work.

  • Care: Hand-wash with mild soap and dry immediately. Never use a dishwasher, as the high heat and detergents will damage the Wenge wood and Buffalo Horn.

  • Safety: Strictly avoid cutting bones, frozen foods, or hard pits; the high-hardness core is optimized for fine slicing and can chip if used on hard materials.

Frequently Asked Questions

How does ZA-18 steel compare to VG-10? ZA-18 is made by Aichi Steel and is considered a step up from VG-10. It contains more carbon, chromium, molybdenum, and cobalt. This allows the knife to be hardened to a higher level (up to 63 HRC), resulting in superior durability and even better rust resistance than standard VG-10.

Is Wenge wood durable? Wenge is an African hardwood known for being exceptionally strong and heavy. It is naturally resistant to moisture and impact, making it one of the most durable natural wood options for a Japanese knife handle. The unique dark grain also provides an excellent grip.

Is a 69-layer blade better than a 33-layer blade? While the core steel determines the cutting performance, the higher layer count in the Ginga series provides additional structural support to the core and a more intricate, dense Damascus pattern. It is a hallmark of premium craftsmanship.
