This knife is made by Kaneshige Hamono in Sakai City which is one of the biggest knife-producing areas in Japan.
The Konosuke GS+ series knives is the highest level of Kaneshige Hamono's knives featuring a thin convex ground three-layer/san mai blade with a stainless cladding and a semi-stainless/stainless SLD core, paired with a chestnut handle. SLD steel, an enhanced version of SKD11 steel typically found in tap and die tools and metal stamping dies, is known for its durability even under rigorous treatment. Engineered to maintain toughness and workability at high hardness levels, it ensures exceptional performance in the kitchen.
