This knife from the Konosuke series boasts their lightest and thinnest blade, crafted from high-carbon semi-stainless steel with a stainless-clad material, ensuring rust resistance. Its octagonal chestnut handle is exceptionally lightweight, offering effortless control and maneuverability during use.

Ideal for: Chopping, slicing, disjointing, dicing, and julienning.

Useful on food types: Medium to large proteins, a variety of vegetables including carrots, onions, garlic, peppers, and lettuce.

This knife is made by Kaneshige Hamono in Sakai City which is one of the biggest knife-producing areas in Japan. 
The Konosuke GS+ series knives is the highest level of Kaneshige Hamono's knives featuring a thin convex ground three-layer/san mai blade with a stainless cladding and a semi-stainless/stainless SLD core, paired with a chestnut handle. SLD steel, an enhanced version of SKD11 steel typically found in tap and die tools and metal stamping dies, is known for its durability even under rigorous treatment. Engineered to maintain toughness and workability at high hardness levels, it ensures exceptional performance in the kitchen.

Please do not cut bone or frozen food. It may cause the knife to chip or other damaged. No dishwasher please.
