This knife manufacturer is Fukui from Sakai Osaka established in 1912 with OUL being one of their brands. Fukui is one of the oldest knife manufacturers in Sakai. OUL means master skilled craftsmanship.

Aoniko, also known as Blue Steel #2, is a high carbon steel and requires more maintenance than their stainless steel counterparts. This is very hard steel material made of pure carbon steel with fine grained carbon with very few contaminates within the iron. There are only few knife craftsmen who can give the real value of this steel material even in Sakai, so the kitchen knife of Aoniko has become a very rare kitchen knife with value. These knives can be sharpened to a razor's edge. The blade is just simple beauty and gorgeous finish.

This blade needs to be cared for more than stainless steel as it will rust easier, water should be removed immediately. It is a fascinating knife that can be used widely from home to professional.  Please do not cut bone or frozen food. It may cause the knife to chip or other damaged.

Handmade Santoku knives are designed to be thin knives that slice, cut & chop easily through meat or vegetables to maintain the integrity of each item sliced.
