I am very partial to Japanese knives, as strange as it sounds they have personalities. I do a lot of cooking, I especially enjoy the prep work. I have other brands, but I really enjoy Hasu-Seizo knives, they are very special, very high quality. This is a very unusual knife that doesn't have a handle...but I find it very useful in a variety of situations when you don't need a big blade. Be very careful, it's very sharp so handle with care...but it is very fun knife to handle.
I’ve been using as a paring knife in the kitchen also able to use as a utility knife either. It’s very nice steel made from, I use fine sharpening stone to get like mirror finish. It’s one of my favorite knife.
