The blade has a stunning custom finish with stately atmosphere. Black finish is an old-fashioned Japanese style of kitchen knife finishing method. The method does not scrape the entire surface of the blade that has been hardened by quenching, but leaves the black portion of the side other than the blade. This blade is made of Aogami number 2 (blue steel #2) with excellent sharpness and durability.

This blade needs to be cared for more than stainless steel as it will rust easier, water should be removed immediately. It is a fascinating knife that can be used widely from home to professional.  Please do not cut bone or frozen food. It may cause the knife to chip or other damaged.

Gyuto Japanese kitchen knives are ideal professional long thin knives that slice, cut & chop easily through meat or vegetables to maintain the integrity of each component and freshness.

Great Knife!

Love the knife and everything went seamlessly with the order. I have a Miyabi knife and this one was definitely the sharper of the two out of the box. The only thing that surprised me was that during the first use I cut some carrots (as well as poultry and other stuff) and the carrots ended up staining the blade slightly so it now has a slight orange hue on part of the knife.

Overall, beautiful and great addition to the kitchen.

A beautiful knife with a bold finish

This is by far the most beautiful and visibly striking knife I have ever owned. Every inch of it showcases excellent quality and masterful craftsmanship. Giving 4 stars because as beautiful and comfortable as this knife is, the "factory edge" just isn't as sharp as I expected or would have liked.

I work in a professional kitchen and this might be the best knife I’ve ever purchased. 10/10 would recommend. Know what you’re getting into. You have to take care of carbon steel more than other steels.
